Wham Bam? Get Some Lamb! 

An oh, so simple recipe for Valentine's Day for men with SwindonWeb's Gemma Jones
 
It's LOVE-ly Lamb Kebabs - so get skewering!
 
It's nearly Valentine's Day, so what have you got cooking then, gentlemen?
 
Bunch of flowers? Romantic table for two? A little gift that shows your soft side? All very good.
 
But, if you really want to make a BIG romantic impression this Friday or Saturday, may I suggest getting in the kitchen and coming up with a real culinary delight. Something simple, yes, but when it's made by your own fair hand with a little bit of love, it beats nearly all other pressies combined for thought and taste (hopefully!).
 
And this recipe from Scotch Lamb couldn't be more straightforward.

LOVE-ly Lamb Kebabs
 
 
Prep time: 20 mins
Cooking time: 20 mins
 
Serves 2 with BIG appetites!
 
Ingredients

400g 1 inch dice Scotch Lamb leg or neck (not shoulder)
1 red onion, cut into 16 x 1 inch squares
4 mixed peppers, cut into 32 x 1 inch squares
16 cherry tomatoes
16 baby button mushrooms, stalks removed
 
For the dip

250g plain yoghurt
½ cucumber, peeled
25g fresh mint leaves, finely chopped
1 tsp fresh lime juice
 
4 pitta bread
8 wooden or metal skewer sticks
 
Preparation method

To reduce burning, soak wooden skewers in water for an hour.

Divide the lamb and vegetables into eight, two of each vegetable per pile.
 
Arrange and place the skewer through the centre of each item. Season with salt and pepper and brush with vegetable oil. Sear on a hot griddle or barbecue until golden then place in the oven for 10mins.
Place the yoghurt, mint, cucumber and lime juice in a bowl and stir to combine. Season to taste with salt and pepper.
 
Toast the pitta bread lightly on the grill, then serve alongside the yogurt with a green style salad.
