To Cook A Turkey
It is a very personal thing cooking a turkey, but here is what I like to do.
- Have your butcher remove the wishbone from from the turkey. This will help if you stuff the turkey.
- Rub your turkey with about 100g butter. Season well with salt and pepper.
- Line a large baking tray with lots of foil sticking out on all sides.
- Place the turkey on the foil and bring it up to seal making an oven inside the foil. This will help keep in the moisture.
- Cook at 220°C for 20 minutes per pound then add on at least another 20 - 30 minutes.
- Remove the Turkey from the oven and let it rest for another 30-40 minutes. At this point you can get anything else needed like a leek au gratin or stuffing if you haven't put it inside the turkey.
