Pudding & Festive Drink 

Round off your Christmas feast with a mouth-watering dessert and festive tipple

Christmas in Swindon
If you're not a fan of Christmas Pudding, Lesley's Christmas Bombe is sure to hit the spot, especially when washed down with a cheeky glass of her spicy mulled cider!

Recipe

Iced Christmas Bombe
Serves 10
Prep time 30 minutes plus overnight freezing

100g dried berries, like cherries and blueberries
100g apricots
75ml a Christmassy spirit or liqueur, I used Grand Marnier
250g Panettone
300ml double cream, whipped
300g cream cheese
1 bar toblerone, roughly chopped
25g sugar

- Line a 2 pint pudding basin with cling film. Steep the dried fruits in 50ml of your chosen spirit.
- Slice the panettone and line the basin. Sprinkle with the remaining spirit.
- Stir together the cream, cream cheese, toblerone amd sugar along with the boozy fruits. Spoon in to the lined basin. Make a lid with panettone and then bring the cling film up and over to cover the whole thing.
- Place in the freezer for at least 8 hours.
- Remove about 30 minutes before serving. Turn the bombe out, peeling off the cling film. Cut in to wedges and serve with perhaps a glass of my spiced mulled cider.


Spicy Mulled Cider
Serves 6
Prep time 10 minutes
Cooking time 10 minutes

1 litre good cider like Westons or Wychwood
25g sugar
3 bay leaves
1 cinnamon stick
6-8 juniper berries
6-8 peppercorns
1 orange
6-8 cloves

- Pour the cider in to a saucepan. Add the rest of the ingredients and slowly bring up to a simmer.
- Serve in robust glasses or a good old fashioned beaker!
